30卷 6期结构化学 (JIEGOUHUAXUE) Vo1．30，No．6 20l1．6 Chinese Struct． Chem． 827～832 DensityFunctionalStudyontheM echanism ofAmadoriRearrangementReaction BAOXiu-Xiu CHENZu．．Qin XIEHu．．Jun~ (DepartmentofAppliedChemistry,SchoolofFoodScienceandBiotechnology, ZhejiangGongshangUniversity,Hangzhou310035，China) ABSTRACT Thereactionmechanism ofamadorirearrangementin theinitialstageofMaillard reactionhasbeen investigatedbymeansofdensity functionaltheorycalculationsinthegaseous phaseandaqueoussolution．Cyclicriboseandglycineweretakenasthemodelinhteamadori rearrangement．Reactionmechanismshavebeen proposed，nadpossibility fortheformation of differentcompoundshasbeenevaluatedthroughcalculatinghterelativeenergychnagesfordifferent stepsofhtereactionbyfollownigthetotalmassbalance．Tllecalculationsrevealhtathteamadofi rearrnagementinitializedviatheintramolecularrearrnagement，trnasferringoneprotonfromN(3)to O(4)atom．Inhtenextstep，thesecondprotonisalsortansferredrfom N(3)to0(4)atom， correspondingtohtecleavageofC(4)一O(4)bondandhtereleaseofonewatermolecule．Then anohterprotonistransferredrfomN(3)toC(5)atom viaTS3wihtthereactionbarrierof58．3 kcal’otolaftertunnelnigtheeffectcorrectioncalculatedatmeB3L ／6-31+G(d)leveloftheory, nadthisstep isratelimitingforhtewholecaatlyticcycle．Ultimately,hteproductisgeneratedvia keto-enolicatutomerization．Presentcalculationcouldprovideinsightsintohtereactionmechanism ofMaillardreaction since experimentalevaluationoftheroleofintermediatesin theMaillard reactionisqui钯 complicated． Keywords：DFTcalculations，amadorirearrangementreaction， interstellarmedinm，maiIlardreaction 1 INTRoDUCTIoN
