酶制剂在生活中的应用 Application of enzyme preparation in life 摘要 酶工程又称为酶技术，随着酶学研究的迅速发展，特别是酶应用的推 广使酶学基本原理与化学工程相结合从而形成了酶工程。酶工程是酶制剂 的大批量生产和应用的技术，它 应用的目的出发，将酶学理论与化学工 程相结合研究酶，并在一定的反应装置中利用酶的催化特性，将原料转化 为产物的一 门新技术。本介绍了工业酶制剂的定义与分类、酶制剂在工业 生产中的应用如在食品加工、医药领域、环境保护、农业、化工等行业的应 用。分析了国内及国外工业酶制剂的发展现状及我国酶制剂工业面临的主 要 问题也对工业酶制剂的发展前景进行了简要分析。 关键词 ：酶制剂工业应用 发展现状 发展前景 Abstract Enzyme engineering is also known as the enzyme technology, with the rapid development of the research, especially the application of enzymes to promote the basic principles of the enzyme and chemical engineering, and thus form the enzyme engineering. Enzyme engineering is enzyme preparation for mass production and application technology, it from the application of combining the enzymology theory and chemical engineering of enzyme, and make use of the catalytic properties of enzymes in the reactor, the conversion of raw materials is a new technology of product. This paper introduces the definition and classification of industrial enzymes, the application of enzyme preparation in industrial production, such as the application of food processing, medicine, environmental protection, agriculture, chemical and other industries. The development status of the domestic and foreign industrial enzymes and the main problems faced by the enzyme preparation industry in China were analyzed.
