AStudyofAdditiontechniqueofPolyphosphatesonPollockAbstractPolyphosphatesarewidelyusedinaquaticproductsaswater-retainingagent.Butifthephosphatesarenotusedproperly,iteasilycausesaproblemofphosphateexceedinglimits.Theseafoodproductsfromourcountryarealertedbyauthoritiesoftheimportingcountry.Theabuseofpolyphosphatescausesabadeffectonsensoryqualityofaquaticproducts.Thisisoneofreasonsofso-calledfilthysubstancebyFDA.Sotheproblemofpolyphosphatesexceedinglimitsisveryimportance.Itcausesabadeffectonaquaticproductsimportedtoabroad.ThispaperusesPollockexportedfromRussiaasobjectsofstudy.Sodiumtripolyphosphatewhichusuallyusedbyaquaticenterpriseassignal-ingredientwater-retainingagentisusedinthisexperiment.ThechangesbetweenconcentrationofSTPPandweightingpercentageoffillets,residueofSTPPinfilletsareinducedbymeansofsignal-factorexperiment.Thesecondsignal-factoristostudytheeffectofconcentrationofsolution,soakingtime,temperatureofsolutionandtherateinsolutionandfilletonweightingpercentageandorganolepticqualityoffillets.Basingonthesestwosignal-factorexperiments,thispaperusestheincreasingweightinfilletsaftersoaking,drippingwaterafterthawing,drippingwaterafterboiled,andphosphateresidueasindexinorthogonalexperimentL9(34)study.Therangeanalysisisusedwiththeexperimentdata.Thispapergivesanoptimizedprocessaddingpolyphosphate.Theresultsofthisexperimentindicatethat,weightaftersoaking,dropwaterweightafterthawingandboilingareaffectedbysolutionconcentration,soakingtime,temperature,andtherateoffishtosolution，etc….Thesoakingtimehasthegreatesteffectonweightaftersoaking,anddropwaterweightafterboiling.Thecapacityofwater-retainingismostaffectedbysolutionconcentration.Theoptimumpolyphosphatesadditiontechniquedeterminedbythisexperimentisasbelow:sodiumtri-polyphosphateconcentrationis3%,soakingtimeis5minutes,solutiontemperatureis0℃,andtheratioofsolutiontofilletis1:0.5.Keywords:aquaticproducts;water-retainingagent;polyphosphates;addtechnique目录第一章文献综述................................................................
