Fujian Cuisine 2011级英语一班 辛玉娟 白海茹 徐舒荣 Introduction Fujian cuisine, also called Min Cai for short, holds an important position in Chinas culinary art. Fujians economy and culture began flourishing after the Southern Song Dynasty (1127-1279). During the middle Qing Dynasty around 18th century, famous Fujian officials and literati promoted the Fujian cuisine so it gradually spread to other parts of China 闽菜是福建菜的简称,它是中国烹饪主要菜系之一,在中国烹饪文化宝库中占有重要一席。福建的经济文化是南宋以后逐渐发展起来的,清中叶后闽菜逐渐为世人所知。 Characters Generally speaking, Fujian dishes are slightly sweet and sour, and less salty, and often use the red distillers grain for flavoring. 闽菜的风格特色是:淡雅、鲜嫩、和醇、隽永。口味偏重甜、酸和清淡,常用红糟调味。 Fujian cuisine is characterized by the following four aspects: (1)Ingredients of seafood and mountain delicacies (烹饪原料以海鲜和山珍为主) (2) Fine slicing techniques (刀工巧妙,一切服从于味) (3) Various soup and broth (汤菜考究,变化无穷) (4) Exquisite culinary art(烹调细腻,特别注意调味) Notable dishes 佛跳墙 佛跳墙 Contains over 30 ingredients, including sharks fin, abalone, sea slug, dried scallops, duck, chicken breast, pigs trotters, mushrooms, pigeon eggs and other ingredients. Buddha Jumps Over the Wall 佛跳墙 There are many stories on the origin of the dish. A common one is about a scholar traveling by foot during the Qing Dynasty. While he traveled with his friends, the scholar preserved all his food for the journey in a clay jar used for holding wine. Whenever he had a meal, he warmed up the jar with the ingredients over an open fire. Once they arrived in Fuzhou, the capital of Fujian Province, the scholar started cooking the dish. The smells spread over to a nearby Buddhist monastery where monks were meditating. Although monks are not allowed to eat meat, one of the monks, tempted, jumped over the wall.
