PAGE 29 摘 要 中国虽然是餐饮业的大国，但餐饮业的上市公司却并不多。近几年，包括九毛九、同庆楼、嘉和一品、广州酒家等在内的多家餐饮企业纷纷传出上市意愿，但仅广州酒家在2017年成功登陆A股，不过从第一次提交材料到最终上市整个过程历时8年。此外，海底捞作为中国餐饮业的巨头，多年来一直被传“上市”，而在2018年9月26日，海底捞终于正式在港交所上市，引起了大众和媒体的广泛关注。餐饮业上市路艰难，成功上市也不代表就能一帆风顺，未来面临的问题依然很多。这不禁让人联想到曾被誉为“中国火锅第一股”的同为火锅餐饮企业的小肥羊昙花一现的上市经历，可见餐饮企业所面临的问题着实不少。如今餐饮业作为第三产业的重要一部分，也随着经济发展、人们生活方式和消费观念等市场环境的变化而不断变化着。中国餐饮在消费市场上具有很大的复杂性，且受到国家政策变动、外国餐饮进入中国市场、经济危机等环境因素的影响。本文选择海底捞和小肥羊作为案例研究，希望可以给同行业的其他公司做以参考借鉴。 关键词：市场环境；财务分析 Abstract Although China is a big country in catering industry, there are not many listed companies in catering industry. In recent years, a number of catering enterprises, including Ninety-nine cents, Tongqing Tower, Jiahe Pin and Guangzhou Restaurant, have expressed their desire to go public. However, only Guangzhou Restaurant successfully landed A shares in 2017, but the whole process lasted eight years from the first submission to the final listing. In addition, Haidilao, as a giant of Chinese catering industry, has been rumored to be listed for many years. On September 26, 2018, Haidilao finally officially listed on the Hong Kong Stock Exchange, which attracted wide attention of the public and the media. It is difficult for catering industry to go public. Successful listing does not mean smooth sailing. There are still many problems in the future. This reminds us of the short-lived listing experience of the same small sheep as the chafing dish catering enterprise, which was once known as the first share of Chinese chafing dish. It can be seen that there are many problems faced by the catering enterprises.
