纳 米 技 术 在 食 品 工 业 中 的 应 用 PAGE PAGE 11 河 南 质 量 工 程 职 业 学 院 摘 要 食品是人类生活中不可缺少的重要组成部分，在把原材料加工成食品的过程中需要许多的工序及其机械设备，把纳米技术应用到这些步骤上将会大大的提高效率及成品的质量。纳米科技是在纳米尺度理解、控制和操纵物质世界的一项科学技术。纳米技术是20世纪80年代末、90年代初迅速发展起来的一项高新科学技术，许多国家均把其列入国家重点研究领域，每年投入大量人力和物力对其进行基础和应用研究。纳米技术已广泛应用于材料、化工、医药、通信、能源等领域，近年来纳米技术在医药上的许多研究成果正逐步地应用于食品行业，使食品工艺得到了改进，生产效率得到了提高，还开发、生产了许多新型的食品以及具有更好的功效和特殊功能的保健食品。2003年9月，美国农业部首次展望了纳米技术在农业和食品上的应用前景，认为纳米技术将改变食品生产、加工、包装、运输和消费等各个环节，从而改变整个食品工业，本文对纳米及纳米技术进行了简单介绍，针对纳米技术在食品工业中的应用就纳米技术在食品包装材料、食品机械、食品检测、食品加工及其纳米食品等方面的应用加以综述。 关键词：纳米技术 食品工业 应用 Abstract Food is the humanity lives the essential important constituent, in processes raw material food in the process to need many working procedures and the mechanical device, applies a nanotechnology these step general to be able big to enhance the efficiency and the end product quality.
