AbstractAcomparativestudywasconductedtoinvestigatethemorphologicalandnutritionaldiversityofcommercialsizeParalichthysolivaceuswhichgrewinthreekindsofgrowthpattern,includingwild(W),pond(P)andfactory(F)cultured.ThecurrentstudyisaimingtoinvestigatetheeffectofdifferentgrowthpatternsonnutritionalvalueofP.olivaceusaswellastoprovideareferenceformusclequalityappraisalofP.olivaceus.Inaddition,toprovidetheoreticalbasisforfurtherinvestigationofculturetechnologyandartificialdietdevelopofP.olivaceus.Theresultsillustratedasfollows:ThemorphologyanalysisofthreekindsofgrowthmodelsofP.olivaceusshowedthatthehepatosomaticindex(HSI)ofWgroupwaslowerthanPandFgroups(P0.05),buttherewasnosignificantdifferencebetweenPandFgroups(P0.05).Nosignificantdifferencewasshowninconditionfactor(CF)andfleshcontentofP.olivaceusinthethreegrowthmodels(P0.05).TheproximatecompositionsofP.olivaceus’swholefish,muscle,liverandskininthethreegrowthpatternswereanalyzedrespectively,showedthatthecrudeproteinandashofthepondculturedP.olivaceuswholefishremainedsimilartothatofthewildones,whilemoistureofthefactoryculturedP.olivaceuswholefishremainedsimilartothatofthewildones.CrudelipidoftheP.olivaceuswholefishinthethreegrowthmodelsshowedthatPFW(P0.05).Themoisture,crudeproteinandashcontentofliverinwildP.olivaceuswerehigherthanPandFgroups,whilecrudelipidoftheP.olivaceus’sliverinthethreegrowthmodelsshowedthatFPW(P0.05).ThefactorygrouprespectivelyexceededPandWgroupswith82.31%,150.03%.HighlevelofcrudelipidinlivermightinducehepaticsteatosisforfactoryculturedP.olivaceus.CrudelipidofthewildP.olivaceusskinoneithereye-sideorblind-sidewashigherthanpondandfactoryculturedones(P0.05).WildP.olivaceus’smusclewithhighproteinandlowlipidcharacteristic,pondculturedwassimilartothewild.Forfleshqualityevalution,themusclewaterholdingcapacity,collagencontent,musclefiberdiameterandtexturalcharacteristicsanalysisofthesethreegrowthpatternwereanalyzed,resultsillustratedasfollows,driplossrateoftheP.olivaceusmuscleoneithereye-sideorblind-sideinthethreeg
