    vineyardiscarefullyassessedforflavorintheleaduptoharvest.Onthedayofharvest,

    thefruitispickedinthemorningandrapidlybroughttothewinerywhereitisde-

    stemmedandcrushedbeforebeingtransferredtotheopen-toppedfermenters.

    Forthenexteightdays,thefermenterswereplungeduptothreetimesdaily,easing

    backtotwointhelastcoupleofdays.Asthefermentationcametoanend,eachbatch

    waskeptcoveredforaperiodofsevendaysexceptforabriefpump-overdaily.The

    wineswerecarefullyassessedeachdayfortannindevelopmentandoverallharmony.

    Whenitwasfeltthatthewinehadevolvedtoapointwefoundsatisfactory,thewine

    wasdrainedoffundergravityandtheskinstransferredtothepress.Afterthreedaysthe
