Unti 1 People in different countries use different utensils for eating. While the majority of people use the conventional fork and knife, Chinese people use something quite different. They use utensils with which many of us are not familiar. They use two sticks known as chopsticks. The chopsticks were first judged of as a simpler, more refined way of eating. Most food used in Chinese cooking is cut up in small bite size pieces. This way of cooking food lends itself to using chopsticks. The chopsticks allow a person to eat with only one hand, leaving the other one free for holding the bowl. Chopsticks are made from many different kinds of materials . Most of the people in southern China use chopsticks made from bamboo or wood. Many wealthier people and families in China use chopsticks made of more precious materials, such as ivory or silver. These more elaborate kinds of chopsticks often may be passed down from one generation to the next . The Chinese use their eating utensils to let others at the table know when they would like to be excused . When someone wants to leave the table, he lays the chopsticks across his bowl. The host then removes the chopsticks, and places them on the table. This means that the guest is free to leave.
