100吨牛肉冷冻冷藏库设计致谢34目录参考文献35摘要摘 要本文以实际生活生产工程的需要，设计了存放100吨牛肉冷冻冷藏库。其中包括了冷冻库冷藏库结构类型的选择、冷库制冷系统的选择、冷库的尺寸计算、冷库耗冷量的计算和制冷设备的选择、辅助设备的选择、冷库的自动控制以及系统融霜等内容。本次设计，是根据国家规定的冷库设计建造标准，综合考虑大连地区的海洋性气候条件，安全合理化的设计了存放100吨牛肉的冷冻库和冷藏库。由于每个设计细节都会影响对牛肉的冷冻冷藏效果，因此，在设计过程中，竭力考虑到各种影响因素，如制冷设备的制冷能力、库房内的风速风量、产品在冷冻库和冷藏库内的不同的包装形式、存放形式等，尽量采取最佳方案来保存牛肉，减少保存过程中对牛肉的质量的损耗，保持牛肉的新鲜度，达到最好的冷冻冷藏效果。关键词：　装配式冷库，制冷系统，制冷量，制冷设备摘要AbstractThis paper has been designed the freezer and the cold store of 100 tons of beef with the need of the production engineering of actual life. Including the choice of structure type of the freezer and cold store , the choice of the refrigeration system, the calculation of the size of the freezer and the cold store, the calculation of the cold load and choice of the refrigeration facilities, the choice of the assistant facilities, the automatic control and system for the frost to be in harmony. This paper, according to the national regulation of the design for the cold storehouse, consider the natural environment condition of Dalian area synthetically, has been designed the freezer and the cold store of 100 tons of beef reasonable and safely. Because each design detail will influence the result to the refrigeration of the beef, in the course of designing, various kinds of influence factors was considered, for instance ,the refrigeration ability of the refrigeration facilities, the wind speed in the stores, the different packaging form of the products , deposit form, etc. During the designing, the best methods were taken to keep the beef, reduce the loss of the quality to the beef in the preserving course, keep the fresh degree of the beef, obtain the best refrigeration result. In addition, in the course of choosing the refrigeration equipment, besides the reference books of different equipment, the websites of the factories which produce the refrigeration equipment on the internet were looked for choosing the equipment.
