FOOD SCIENCE AND TECHNOLOGY    ( 550001) DOI:10.13684/j.cnki.spkj.2015.08.047 Inhibitory effects of black tea on panreatic lipases Guided by the pancreatic lipase inhibitor activity screening, it was found that the ethyl acetate fraction showed the most potent activity. With different chromatography methods, the active ethyl acetate fraction was separated into active compound caffeine and several active subfractions according to the pancreatic lipase inhibitory screening results. Caffeine and polyphenol were the main active compound in the black tea. The mechanism of the inhibition research on the the active ethyl acetate fraction and the typical components of black tea, caffeine, EGCG and theafl avin indicated that the inhibition reaction was uncompetitive. black tea extract; panreatic lipases; inhibitors; caffeine; uncompetitive inhibition
