论长沙高星级酒店餐饮大众化经营创新研究 摘 要 改革开放以来，餐饮业经营服务领域拓宽，经营方式更加多样化。尤其近年来，随着居民消费水平的提高和双休日的实行，以及城乡居民生活节奏加快和消费观念的改变，人们越来越多地告别厨房，走进各色餐厅，享受便捷、质优、价廉的饮食服务。同时，星级酒店的客源越来越大，已不仅仅局限于海外旅游和国内的高官显贵，大众消费者也成为饭店客源之一。然而，目前餐饮业结构不尽合理，中高档餐馆发展较快、数量过剩，需求不足；而大众需求较大的中低档餐馆普遍存在着脏，差，乱的现象，处于低水平的发展阶段，难以满足广大消费者的需求。在这种情况下，国内各大酒店提出了酒店餐饮大众化，引起了业内人士的关注。这里所说的价格并不是指绝对价格无限制的低，而是指相对于其产品质量水平和服务标准来说，价格较低。本文通过酒店餐饮面临的一些现状入手，提出了酒店餐饮大众化经营的创新方法，以提高酒店的经营效益并且满足消费者的需求。 关 键 词：酒店餐饮，餐饮大众化，经营效益，大众美食 the Research of Restaurant Popular Operating Innovation in High Star Hotels in Changsha Auther:Lu Zhang Tutor:Yong Hu Abstract Since reform and opening up, restaurant operators expand service areas, diversify more operations.especially in recent years,with the increasing of resident consumption level and effectuation of “two-day” daysoff,the more resident go out to eat,the more consumptions. More source of passenger in starred hotel,mass consumption be the one of the hotel passenger souce,not only be confined in guests abroad and people in the high position .however,nowadays,food structures are not reasonable,upscale restaurants develop fast,overpopulation,and scantdemand.while,low and medium-grade restaurant which demand much for most people are dirty,disorderly and poor,at low-developing level,which is hard to satify demand for general consumer.under this circumstances,”the hotel restaurant in a popular style”comes up in many hotels,which cause the concern of the industry. It doesn’t mean that the price is as low with no limited, instead, it is relatively low as for quality of their product and service. This paper presents the way for hotel to run in popular style by the current situation they are faced with to promote the hotels’ operational efficiency and satisfy customer’s demand.
