w w w TOC \o 1-2 \u 摘 要 近年来，我国的啤酒需求量日趋增大，随着市场竞争的加剧与消费群的日益成熟，对啤酒的质量和风味的要求也越来越高，但是目前国内啤酒糖化生产过程自动化程度较低，因此利用先进的自动控制技术对糖化生产进行过程自动控制是提高啤酒质量的重要手段。 本文通过对啤酒生产糖化过程的工艺及关键问题的分析，从硬件、软件两个方面对啤酒生产过程中啤酒糖化沉淀冷却自动控制系统进行设计。 啤酒糖化沉淀冷却控制系统上位机使用工业组态软件MCGS设计，具有友好的人机界面，方便直观的实现了对麦汁、酿造水、冰水等温度的监控和操作。计算机控制系统下位机通过PLC的控制来实现，具有良好的稳定性和准确性。 啤酒生产是一个大型的传统产业，工艺复杂，操作步骤多。而我国大多数啤酒生产企业技术装备落后，自动化程度低，产品质量不稳定，缺乏市场竞争力。如何提高啤酒生产过程的综合自动化水平，提升企业的生产和管理水平，是一个刻不容缓的研究课题。因此，本文以啤酒生产过程为工程背景，对啤酒糖化中沉淀冷却过程的控制展开研究，这对利用高新技术改造传统产业，提高我国啤酒产业的综合实力具有重大的实际意义和研究价值。 本文通过对啤酒生产过程的工艺及糖化过程中沉淀冷却关键问题的分析，从硬件、软件两个方面对啤酒糖化过程中的沉淀冷却控制系统进行设计。 关键词：PLC；啤酒糖化；自动化 Abstract In recent years, Chinas beer demand increases with each passing day, with the aggravation of the market competition and consumers increasingly mature, the quality and flavor of beer are increasingly high requirements, but the current domestic beer saccharification production process automation degree is low, so the use of advanced automatic control technology on Saccharification production process automatic control the important means to improve beer quality.
