论酒店餐饮从业人员的高流失率原因及对策 ——以句容开元名都为例 摘 要 改革开放以来,我国经济的迅猛增长推动着各行各业的快速发展,而酒店业俨然已经成为了国民经济发展的重要力量之一。然而,多方面的因素一直制约着我国酒店业的正常发展,其中最为主要的便是员工流失。员工流失率过高,是我国产业结构升级转型的第一路障。众所周知,餐饮,是酒店经济的支柱产业之一。酒店餐饮不仅主导着酒店的经济产量,更是对顾客有着直观的影响。在去年国家宏观政策的改变下,这种趋势更加明显。酒店人员流失严重,而酒店中劳动强度最大的餐饮业,流失最明显的。有鉴于此,通过中外星级酒店的详细调查和数据对比,以及酒店流失问题研究理论的基础分析下,总结了近年来高星级酒店餐饮人员流失的原因,并提出一些解决问题的可行之策。 关键词:人员流失;餐饮;流失问题研究;解决问题 On the reasons and countermeasures of high turnover of hotel and catering workers --A Case study of Jurong New Century hotel Abstract Since reform and opening up, Chinas rapid economic growth is driving the rapid development of trades and hotel industry has become one of the most important force in the development of the national economy. However, various factors have been restricting the normal development of Chinas hotel industry, the most important is staff turnover. The staff turnover rate is too high, is the first roadblock of the transformation and upgrading of the industrial structure in China. As we all know, food and beverage, and serves as one of the pillar industries of the economy. Hotel restaurant not only dominates the economic output of the hotel also has a direct impact on customers. Under the national macro policy changes in the past year, this tendency has become even more pronounced. Hotel staff wastage and greatest intensity in the hotels food and beverage industry, the loss of the most obvious. In view of this, through detailed surveys and data comparison of star hotels at home and abroad, hotels, as well as the drain of theory based analysis, summarized the reasons for the loss of high-star hotel catering personnel, and puts forward some feasible strategies to solve the problem.
