乳蛋白水解產物抑制3T3-L1脂肪細胞分化 黃嵩程 吳鈴彩 洪連欉 陳珠亮* 東海大學畜產與生物科技學系 (收件日期95年5月31日;接受日期95年7月3日) 摘  要   乳中的蛋白質水解所產生的胜月太在最近被認為能夠調節一些特殊的生理功能,並成為機能性食品中一項重要組成分。本試驗旨在探討乳蛋白水解之胜月太產物對脂肪細胞分化的影響,以3T3-L1前脂肪細胞株為試驗材料。將生乳經過胃蛋白酉每分解處理得到的胜月太產物,在脂肪細胞分化過程中個別添加不同濃度的乳蛋白水解之胜月太產物於細胞培養液中,由觀察細胞分化型態發現,在添加分化試劑之後第四天,其細胞的油脂堆積情形明顯受到抑制。當乳蛋白水解之胜月太產物經過加熱處理之後,其對油脂堆積的抑制效果則會明顯下降。因此實驗結果證明,未經熱處理的乳蛋白水解之胜月太產物可以有效抑制脂肪細胞的分化。 關鍵詞:生乳、胜月太、脂肪細胞、分化 Enzymatic Hydrolysates of Milk Proteins Inhibit Adipocyte Differentiation Sung-Chen Huang, Ling-Tsai Wu, Lien-Tsung Hung, and Chu-Liang Chen* Department of Animal Science and Biotechnology, Tunghai University, Taichung, Taiwan (Date Received: May 31, 2006; Date Accepted: July 3, 2006) Abstract Peptides derived from hydrolysis of milk protein have been found to modulate specific physiological functions and adopted as an important component of functional food ingredients. This study aimed to investigate the effects of peptides produced from enzymatic hydrolysis of milk protein on adipocyte differentiation, using the 3T3-L1 preadipocyte culture system. Different concentrations of peptides generated from pepsin hydrolysis of milk protein were applied to the culture medium during the differentiation of 3T3-L1 preadipocytes. Microscopic observation showed that the peptide-treated cells had lower levels of lipid droplet accumulation than the non-treated cells. However, the inhibitory effects of peptides were abolished after the peptides were boiled for 10 minutes before being applied to the differentiation medium. In conclusion, the peptides derived from milk protein hydrolysis could inhibit adipocyte differentiation.. Key words: Milk, Peptide, Adipocyte, Differentiation
