Fujian Cuisine;Fujian province is located in the southeast of China, facing the sea, with the continuous mountains, and abundant rainfall. The ground here is green all the year around. Each season here seemed like spring. There are about forty million people live in here.;With long coastline and vast seashores , there are plenty of seafood, such as shrimp, snail, vast, mussels, oysters and etc. The vast river plain, is rich in rice, sugar, vegetable, fruit, especially in litchi, longan, citrus and other kinds of fruit famous at home and abroad. ;Fujian people use these resources endowed by nature, to cook delicacies, winning universal praise, and gradually formed a taste of its own. Fujian cuisine is particular about ?ingredients. They pay attention to the knife skills. And they emphasis on soup. In addition, they take delight in seasoning so that the taste is very changeable.;Fujian cuisine is one of the?eight?famous?Chinese?cuisines, originated in Fuzhou. In fact, Fuzhou food acts as the main body of Fujian cuisine, on behalf of Fujian culture. Fujian cuisine then divided into three main parts in the later development.;Fujian cuisine ; Fuzhou food is always with light ,refreshing, sweet tastes. People pay attention to the flavor of the soup. They are good at cooking all kinds of delicacies from land and sea.;Minnan cuisine originated from some areas including quanzhou, xiamen, and zhangzhou area, pay attention to seasoning sauce. The cuisine is with heavy taste.;The Minzhong food originning from the Yangtze River area and the southwest area, emphasis on salty and spicy, and the taste is with mountain flavor.;Gradually, Fujian Cuisine formed three characteristics, one pays attention to the red sauce, one is good at making soup and the other one emphasis on using sugar and vinegar.;This tradition even spread into Shanghai.
