DOI:10.15905/j.cnki.33-1157/ts.2014.02.005 技术应用 41 中国茶叶加工 2014 ，（2 ）:41～43 简述都匀毛尖茶加工技术 欧平勇 （黔南布依族苗族自治州都匀茶场，贵州都匀 558011 ） 摘 要： 通过 对都匀 毛 尖茶传 统手 工加工工 艺的介绍 ，分析了其弊端 ，提 出都匀毛 尖茶 必须进 行 机械化 生 产 ，并详 述了都匀 毛 尖茶机械加工技术 。都匀 毛 尖茶机械加工 可选 用微型 名优 茶机械 完成 杀青 、揉捻 、烘焙 等 主 要 工序 ，技术 上 将 热揉 改 为冷揉 ，并 用烘 焙机代 替 炒锅 进 行做 形 、提 毫和 烘 焙 等 ，减轻 了制 茶工 的 劳动 强度 ，提 高 了生产 效 率 ，并且稳 定了茶叶品质 ，有利 于都匀 毛 尖茶标准的 统一 。 关键词： 都匀 毛 尖茶 ，传 统加工 ，机械加工 ，生产 效 率 ，品质 中图分类号： 文献标识码： 文章编号： （ ） TS272.4 A 2095-0306 2014 02-004 1-03 Sketching Processing Technology of Duyun Maojian Tea OU Ping-yong ( Qiannan Duyun Tea Plantation, Duyun 558011, China ) Abstract: Through the introduction to the traditional manual processing of Duyun Maojian Tea, this paper analyzes its shortcomings and proposes that its production must be mechanized. In addition, it elaborates the machining technology of Duyun Maojian Tea. During its machining process, major steps of fixation, rolling, and baking can be completed by minitype equipment for the famous tea, In terms of technology, hot rolling is replaced by cold rolling, while the baking machine substitutes the frying pan for shaping, trimming tipping, and baking, which reduces the labor intensity of tea workers, improves production efficiency, stabilizes tea quality, and helps the standardization of Duyun Maojian Tea.
