延 边 大 学 （ 二 〇 一 四 年 六 月 摘 要 肺结核是一种由结核杆菌引起的慢性传染病。由于近年来结核杆菌产生耐药性，结核病变得更加严重。为了治疗肺结核，科学家们做了很多研究，发现酸马奶对肺结核有治疗效果。酸马奶是一种古老的保健饮品，具有清热解毒，润肺止咳以及杀死腐败菌等作用，对肺结核有非常好的治疗效果。贺银凤等人将酸马奶中的微生物分离后进行鉴定与研究，并得出结论：酸马奶中的酵母菌以及脂肪可以有效抑制结核菌的生长。饮用酸马奶不但能满足人体机能的需要，还能有效补充矿物质和维生素。我国内蒙古地区已经设立了“酸马奶医疗中心”，专门治疗结核等慢性疾病。我们可以期待在不久的将来，酸马奶作为新型抗结核药物进行上市。 关键词：酸马奶；肺结核；结核杆菌；酵母菌 Abstract Koumiss is a tradition fermented milk product originated from the Central Asian steppes and mostly produced from mare milk by spontaneous fermentation of lactose to lactic acid and alcohol. Koumiss’s starter cultures consist of lactic acid bacteria (Lc. lactic and Lb. acidophilus) and yeast (Sc. cereviceae). Koumiss is believed to pose health promoting properties, which is mainly related to the ability of the starter to produce vitamins of the B-group and antimicrobials. Koumiss could also served as functional food that was showed by its capability to produce the antimicrobial substrate that inhibit pathogenic bacteria. The objectives of this review paper were to identify microbiological characteristics of koumiss and to study its antimicrobial activity towards pathogenic bacteria such as Mycobacterium tuberculosis. In the view point of Koumiss therapy in sanatorium conditions, it could strengthen the appetite, increase the secretion of gastric juice, and improve the digestion of food. There was an effective amount of drinking koumiss for treatment to inhibit the growth of Mycobacterium tuberculosis. It could be recommended to have 240 ml for breakfast, 350 ml for lunch and 450 ml for dinner during 30 days. The conclusion of this review paper that koumiss was effective to against pathogenic bacteria such as Mycobacterium tuberculosis including various pathogenic bacteria. Furthermore, it urgent needs to further study to make koumiss-based functional foods as medicine to protect the infection of Mycobacterium tuberculosis and pathogenic bacteria.
